Eggs!

My hubby is currently obsessed with eggs. Scrambled, poached, hard-boiled, over easy, you name it, he likes it. He had kinda turned into a workout fanatic so he needs his protein. (On a side note, I am super proud of him. He has lost almost 40lbs since Christmas and is more fit than I have ever seen him. Good job honey. OK, back to business.) Eggs. Yes. He loves them. So I saw a little recipe on Pinterest that I thought I would give a try to see what he thought. :) I got the idea from this post http://www.kalynskitchen.com/2006/10/egg-muffins-revisited-again.html.


I pretty much followed right along her directions. I will make a couple modifications in the future but for the most part it was perfect just as she said. 


Ingredients:
Eggs- Her recipe called for 12 eggs if using silicone muffin tins but I will only use 9 in the future. I had plenty of eggs leftover after filling the 12 compartments. 
Toppings- I chose ham, cheese and green onions. You can choose whatever you would like.
The original blog posted they they used some seasoning in the egg mixture but I didn't have any so I didn't use it. I did add a bit of salt and pepper but not much. 




By the way, I found my silicone muffin tins at a garage sale for a quarter each. Score!


It really cannot get much more simple from here. 
- pre-heat the oven to 375 degrees
- spray your muffin tins with a non-stick cooking spray
- put your toppings in the bottom of the tin
- beat the eggs- I simply did this with a whisk
- pour the mixture over the toppings - only fill about 3/4 full so they don't spill over
- put in the oven for about 15-20 minutes 
- loosen with a fork, pop them out and voila...you are done. 


See, I told you this was easy.




The original post said they these will last for about a week in the refrigerator. She did freeze them but she liked the taste better with them not frozen. Since I just did these today I cannot shed any light on this. I just wanted to share her thoughts in case you were wondering.  


When Bryce got home from work I told him about the eggs and he, of course, wanted to try one. Lucky for me he loved them! Maybe he will start eating these for breakfast everyday instead of making them. I am sure you are wondering why this would make me so happy. It does for this reason, i will not longer spend my mornings scrubbing that nasty pan that eggs were cooked in. Ulterior motives maybe. :)


As I sit here and write this it is 10:45PM. I just heard Bryce walk into the kitchen, open the refrigerator and say "These little things might be dangerous." Followed by the hum of the microwave.

For our trip to Colorado I wanted to do something really special for Ruby. Thirteen hours in a car is a long time so I wanted to give her something to look forward to. So for the last few weeks I have been picking up some randoms things for her when I came across a good deal. I came up with this loot.


I didn't spend more than $10 on all of it, including the LeapPad with Princess and Dora games. (I love garage sales).

This one was my favorite. Ruby loves to "chalk" so I took a cardboard box and some chalkboard paint that I already had and voila...she can chalk in the car. (In case I forget, remind me to tell you a story about this favorite gift of mine.)



Next I took some wrapping paper and wrapped them all up. What kid doesn't love to open presents? Right?



She had this sitting next to her and got to open one every so often along the way. I love it.

Remember that favorite present I told you about? Well, I told Bryce about it a few days before because I was excited about it and I knew Ruby would be too. On their trip I called to find out how they were doing. I asked Bryce what present she opened first and I he told me it was the chalk. I asked if she loved it and he said, "she hasn't used it yet because we haven't stopped yet." "What do you mean you haven't stopped? It came with a chalkboard." All of the sudden there was a dead silence followed by an "oops," He "forgot" what I had told him a day earlier and thought that i just wrapped it funny. So he threw the box away at Starbucks on their way out. Oh...that man is so lucky that I love him.

We got home from our lake trip on Monday and we left for Colorado 2 days later. Well, 2 of us anyway. We thought that two 13 hour car rides in 5 days was not the smartest thing to do with an 8 month old. So Neve and I decided to fly one of the legs of the trip and flew out on Wednesday. Bryce, Ruby, Tommy, Janice, (my in-laws) and Ben and Stacie (my bro and sis n law) set out on the drive on Thursday. Ben and Stacie are staying in Colorado an extra week and then will fly home so that opens up a spot in the car for me and Neve on the way home. Confusing, I know.

I was a little worried about Neve on the plane but let me tell you. She did awesome! She fell asleep during the flight instructions, slept for an hour and a half and was only awake for the last 20 minutes. She had a bottle and was a complete angel. I was so impressed with every encounter I had at the airport. Seriously, everyone was so great. From the TSA agents, the cleaning staff, flight attendants, right down to the pilot. When we got off the plane I was waiting for my stroller when the pilot walked off the plane. He personally went down and found it for me because he saw that I had my hands full. Kudos Frontier Airlines. Job well done.

This little girl and her momma certainly appreciated it.




I was so excited to be in Colorado a day early. I got to spend some quality time with my sweet nieces. Bridget turned 10 the day while we were here so we got to spend it with her before the rest of the family arrived. I also got to meet my precious niece Penelope Rose. She was born in April but this is our first time meeting her. I surely did not mind stealing as many cuddles as possible before the rest of the clan got here and I would have to share her. :)



I won't lie. I was glad when everyone arrived. I sure did miss my Ruby. She was so happy to get here and see her cousin Bridget. They wasted no time. They were outside playing within minutes.



It's a bit crazy here. Twelve people in one house can bring a bit of chaos. But it is good chaos and I love it.

As I type I am sitting at a lake resort at the Lake of the Ozarks. I have been away from my babies for over 48 hours and I am missing them like crazy. You would too. Just look at these sweet faces.


Now don't get me wrong. I am having a lovely time. It is beautiful here. I have been able to sleep in, soak in the rays, go out on a boat and eat like a crazy woman. And all of it has been free. Even better. This is one of the perks of having one of my best friends be the Director of Student Activities at a university. Chaperones = free trip. :)




I think my girls are having the time of their lives. In the 48 hours that we have been gone they have been to McDonald's. Dairy Queen (twice), Chik-fil-a, the park, the library, the movies, Monkey Joe's, swimming and who knows what else they have forgotten to tell us about.They may not want to come home.

One more night of us being "kid-free" and one more night of my kiddos being spoiled by the grandparents and we are back to normal. Well for 2 days anyway. Then we are off to Colorado to meet my sweet niece, Penelope Rose. See you soon Penny. And your beautiful big sister as well.

Knowing how I roll I am thinking this blog will last about a week before I put it on the back burner. But I am really gonna try to go longer. Maybe two weeks? :)

I thought I would put something together where I could keep a timeline to remember later in life. Funny things my kids say and do, crafts we do, my Pinterest creations (good or bad), and anything else I want to add in. 

Now that I am a stay at home mom I figured now is the time to start anew and keep this going.
